Spaghetti Napoletana


Ingredients

250 g spaghetti
Parmesan cheese

Sauce
2 tblsp olive oil
1 onion, sliced
2 cloves garlic, crushed
6 large tomatoes, seeded and coarsely chopped
1 tsp sugar
1 bay leaf
black pepper
2 tblsp fresh basil, chopped

 

Method

Bring a large pan of salted water to the boil. Add the spaghetti and cook for 12 minutes. Drain and keep warm.

Heat the olive oil in a saucepan and fry the sliced onion and crushed garlic until softened. Add the tomatoes, sugar, bay leaf, and black pepper to taste. Cover and simmer until the tomatoes are soft. Remove the bay leaf and stir in the chopped fresh basil.

Transfer the cooked spaghetti to a serving bowl. Pour the tomato sauce over the spaghetti and toss lightly. Serve the Parmesan cheese separately.
