Moroccan Rice & Meat Balls


Ingredients

1 cup short-grain rice
500 g finely minced lamb or beef
1 tblsp ground black pepper
1 tsp ground cinnamon
1 tsp ground sweet paprika
1 Spanish onion, finely chopped
2 spring onions, finely sliced
1 tsp ground coriander
2 large onions, finely chopped
¼ tsp ground saffron
2 cups stock
¼ cup chopped fresh Italian parsley
2 tblsp lemon juice
salt and pepper to taste
 

 

Method

Mix the ground lamb or beef with the uncooked rice, cinnamon, ground black pepper, cinnamon, sweet paprika, chopped Spanish onion, coriander, and spring onions. Form into small balls and place in a large glass casserole dish. Add the chopped onions, saffron, and stock. Season to taste. Cook on microwave High for 10 minutes to bring to the boil. Reduce the heat setting to Medium-Low and cook for 40 minutes. Add the chopped Italian parsley and lemon juice and simmer for a few minutes.

Serve Moroccan rice and meat balls with a green vegetable or salad.
