Macaroni Salad


Ingredients

250 g macaroni
3 tomatoes, seeded and chopped finely
100 g cooked ham, chopped
6 spring onions, sliced
1 red capsicum, seeded and chopped
1 green capsicum, seeded and chopped
1 can "Three Bean Mix"
150 g grated cheese
¼ cup parsley, finely chopped
coriander
white pepper
salt
Mexican chilli powder

 

Method

Cook the macaroni in salted, boiling water for 12 minutes. Drain and rinse with cold water. Set aside to drain.

Prepare all the other ingredients. Mix into the macaroni, adding coriander, white pepper, salt and Mexican chilli powder to taste. Combine well. Store in the refrigerator until required.

This is an ideal snack, particularly for children's school lunches.
Serve with any cold collation.

Tins of "Three Bean" Mix may contain navy, lima and kidney beans. Rinse in a sieve and drain before adding to the salad mixture.
