Leek Soup


Ingredients

2 cups sliced leeks
1 onion, chopped
2 tblsp butter
½ cup cream
5 cups chicken stock
2 potatoes, peeled and thinly sliced
salt
white pepper
snipped chives

Method

Another soup to prepare in the microwave:

Wash the leeks well and cut into thin slices.

Heat the butter in a microwave-safe casserole dish, and add the leeks, chopped onion, salt and white pepper. Cook on High for 3 minutes. Add the chicken stock and sliced potatoes. Cook on High for 10 minutes, or until the vegetables are tender. Allow to cool slightly before liquidising in a food processor.

Return the soup to a casserole dish, add the cream, re-heat on Medium for 3 minutes, and serve with a garnish of snipped chives.
