John's Mountain Man Stew


Ingredients

1 lb lean meat, cubed
2 onions, chopped
1 tblsp mixed herbs
1 x 12 oz tomato paste
2 tblsp soy sauce
2 cups water
1 garlic clove, crushed
1 tsp salt
1½ tblsp beef stock powder
½ cup uncooked rice
6 spring onions, sliced
2 carrots, cubed
2 medium potatoes, cubed
½ cup corn kernels
½ cup peas
1 red capsicum (bell pepper), diced
6 mushrooms, sliced
2 tblsp chopped parsley
1 tin three bean mix, drained (optional)
salt/pepper to taste

 

Method

In a large microwave casserole dish, combine the cubed lean meat, chopped onions, mixed herbs, tomato paste, soy sauce, beef stock, garlic, salt and water. Cook on High for 15 minutes to bring to the boil. Stir and cook for a further 30 minutes on Medium.

Add the uncooked rice, spring onions, carrots, and potatoes. Cook on High for 12 minutes.

Add the corn, peas, capsicum (bell pepper), mushrooms, and parsley. Adjust seasoning to taste, and add water if required. Cook on Medium-Low for 50 minutes.

Before serving, add three bean mix (optional) and serve in a bowl with bread rolls.
